Snowed In: Day Three and Counting...

IMG_5221We have had the snow storm of the decade here in the South…and we are still digging out! I am not going anywhere…nor will I until maybe Saturday! The streets are a solid sheet of ice and nothing is melting! And with temperatures in the teens, that’s not snow anymore…it’s mounds of ice! Sooo…what are we doing?

IMG_5204 …and burning our favorite wintry scented candles! I love this Bath and Body Works scent and can’t put it away, even though it is a little Christmasy! I decided that the snowman salt and pepper shakers could stay out, too…in honor of the snow storm!

IMG_5213 And I have been cooking up a storm myself! This is one of my favorite old Weight Watcher recipes for a different spin on chicken pot pie. The recipe is at the end of this post. On the agenda for today…clean and organize! And I have a confession…Christmas has not left the guest room! I have been busy with my grandchildren...so today, I am putting it all away!

Weight Watchers ~ Chicken, Cheese and Biscuits
from Confessions of a Plate Addict
Ingredients:
1 tablespoon + 1 teaspoon margarine
2 tablespoons + 2 teaspoons all-purpose flour
½ teaspoon powdered mustard
¼ teaspoon rubbed sage
1 ½ cups skim milk
1 packet of instant chicken broth (or 1 teaspoon granulated chicken bouillon)
Dash white pepper (I just use black), or to taste
4 ounces Cheddar cheese, shredded
8 ounces of skinned and boned cooked chicken, diced
1 cup each of sliced carrots, stemmed sliced mushrooms, and broccoli florets
(The veggies should be cooked ahead.  Sometimes I use green beans or cauliflower instead of broccoli.)
½ cup chopped onion
4 ready-to-bake buttermilk flaky biscuits
( I use the small can of Grands buttermilk and have one biscuit left over.)
Directions:
In a 3 quart saucepan, heat margarine until melted. Sauté the onions and mushrooms in the margarine. Add flour, mustard, and sage and stir. Add milk, stirring constantly. Cook until smooth. Add broth mix and pepper and reduce to low heat and cook until thick…5 or 10 minutes. Add cheese and stir until melted. Add the veggies and chicken and cook until heated through…3 to 5 minutes.
Preheat oven to 400 degrees. Spray 1 ½ quart casserole with non-stick cooking spray and pour chicken mixture into casserole. Carefully separate each biscuit into two layers of dough, making 8 circles: arrange biscuits over chicken mixture in an even layer, overlapping slightly. Bake until biscuits are golden, 7 to 10 minutes.
Makes 4 servings.
This is the old WW, so I only have exchanges, not points. Each serving has 428 calories and counts as 3 protein, 1 bread, 1 ½ veggies, 1 fat, ¼ milk and 35 calories Optional Exchange.

  3. Debbie, we are still trying to dig out too! We got 8 inches of snow and ice and we don't handle that well here in the South! Today was the first day back at work for me, schools are still closed, and it was a rough ride in let me tell you! I did announce upon arrival in the ice covered parking lot at work....Are you people trying to get us killed???? I am leaving early! I am NOT driving home in the dark! Can't see the black ice!

  5. Debbie, we know what you mean about being snowed in. Temps here are more than frigid, the artic air coming off the snow is almost unbearable. Looks like you and Kitty have the right idea.. thanks for sharing the recipe..

  9. I love being cozy too, but the winter is too long!!! I do love roaring fires though, they make it almost worth it! :)

  11. The fire looks so warm and cozy!! :) I am actually pretty envious right now! BUT, then I remember how caged in I felt last winter when I was snowed in with two rambunctious girls and a surgery-recovering hubby. ;)

    I stumbled onto your page when researching Quimper and just love it. I bought 2 Quimper plates at a great price but am unsure how I want to display them. Do you offer advice through email or something? I also love everything French. I was just in Provence in Sept. I have a load of pictures on Googleearth.

  15. Still snowed in here in Huntsville as well. I love the snow but I admit I am getting a little "cabin fever"! Your WW recipe looks great - my hubby loves dishes like this so I have saved it to my recipe file. Thanks for sharing!

  17. When we lived in Ny I use to love when it snowed! I use to to stay in and bake or make soup for dinner. Now that I am living in Houston if they tell me its cold out(cold to them)I stay home and bake and make soup! lol Enjoyed your post and the food looks fab! Thank you for sharing....

  20. Love the candle and the fireplace looks wonderful!!

    Still snowed in in NE GA too! And of all times, we're having problems with the heat pump. The HVAC guy has been here every day this week so far. Think we're going to have to have a new system. UGH!!!!!!!!

    We have a 'little' heat right now, but do have the gas logs if needed.

    Think I'll cook something comforting for supper. Hubby loves pork chops so that's what we'll have.

    Funny thing about guest rooms.. mine has seven nutcracker "guests" and one Santa all "sleeping"in the same bed. I'll probably put them away... tomorrow...well, maybe.

    Your photos of the snow are gorgeous! Remember. . .I LOVE SNOW! Like you, I've been cleaning and re~organizing on the lower level and have my Art Studio looking so~o~o nice! Now I'm ready to begin creating and designing, once again.
    we've been eating several types of soup, chili. . .tonight goulash. Your casserole sounds delicious! As soon as I can get to the store for a few more ingredients. . .I'll give it a try!

  27. Wow Deb, Atlanta really got hammered. Snow I can deal with (if FORCED). But ice? Ice scares me to death. I'm so happy that you have the option of staying in and staying warm. That recipe looks delicious. But I guarantee I would NOT have a biscuit left over LOL. Stay warm! hugs, Kat

  28. Hi Debbie, This storm was suppose to head into Virginia but it never happened. I lived in Atlanta for 20years so I know how ill equiped the city is when a storm like this hits. I heard Atlanta has a total of eight snowplows! I hope you get out by the weekend. Stay warm.

  33. I remember what a kick I got out of Ground Hog Day! It was the cutest movie!
    Your snow is lovely..sooo lovely!
    It started off this morning at 51 degree's outside! That's California for you. There were tons of garage sales this past Saturday..and I am always glad on Saturdays that there is not snow. However, everyone was shivering while they sat outside in the early morning with cups of steaming coffee trying to look welcoming and happy to see the perspective buyers! :) Yep, that's California for you!

    I do see snow on the distant mountains thought. That's nice.
    I added to my plate addiction on Saturday. That's always a plus!

  35. Yeppers I'm with Baby Kitty! That is one smart cat! That spot is prime real estate amongst the 4 and two footed kind *winks*
    Thankfully we only have rain here in the Pacific Northwest today...Yay!! Because we're usually the ones with some snow. And even here I'm getting cabin fever, and feel the need to shopercise! The Goodwill is calling my name like a siren song lol!

  36. This southern storm and cold snap is something else. My girlfriend is headed to Charleston this weekend for a race. She may find that she'll have to bundle up when she expected to wear shorts. Your pot pie looks delicious!!
